By "hardcore" I mean so deep that they are very difficult to get into, like ASCII era games. Like the original roguelikes for example. I do realize that part of their difficult comes from plaon bad game design, but I really want some of their depth in modern games. Any suggestions?

I never played games from the ASCII era, so I'm not sure what would be comparable.
As far as punishing games with depth goes, I would say the Resident Evil 2 remake, Vanquish, and Nioh. Especially Nioh, since it's one of the most demanding games while still offering various ways to fight. It's by the creators of Ninja Gaiden.

Divinity Original Sin 2 on hardest difficulty fits your description. Even more so if you play with permadeath enabled.
Other tactical RPGs like Chimera Squad can also be pretty unforgiving on hardest difficulty.

Not modern but if you haven't check out both daggerfall unity and openmw/tes3mp they're modern engines for the old Bethesda games making them not ass to control but keeping all the mechanics
