I want to get into Touhou, what game do I start with?

But if you want my rec, Double Dealing Character doesn't have weird gimmick, is on Steam, and not too hard, so it's probably the best to start with.
Legacy of Lunatic Kingdom is hard af, I don't suggest starting there. Ten Desires is probably the easiest, so it's good if you're particularly bad at bullet hells.
If you're into fighting games, I think Scarlet Weather Rhapsody still holds up well.

| I started with 6. Unlike those on steam it doesn't allow you to get a good ending on easy difficulty. I must've spent several months struggling with it, but hell am I proud I cleared all routes no retry/normal.

| I started with Embodiment of Scarlet Devil, but there's also this really neat fighting game called Antinomy of Common Flowers that I'd recommend taking a look at if you're into that sort of thing.
| 6th is too classic variant, start with 13th. It's on the same level of difficulty and, you know, Toyosatomimi is more cooler than that Remilia.

| i say 7, it's the least gimmicky classic game aside from 6 (which is kind of unforgiving difficulty-wise) and classic games in general are a good place to learn the basics
| 7 is usually considered one of the easier games or at least one of the better starting ones (stage 4 is a bitch though, just to warn). So I think that or 6 would be decent entry games.
