Texnically, can be done right here. The scripts are easy to write once you understand them. Did a couple ones as jokes here months ago.
People could post the text file. All you have to do then is to copy that to the testroom file and edit a savefile to access day -1, the testroom.

One thing that could be done, in theory, is changing the sprites. Never tried that myself, but I did replace songs in the jukebox (wanted those Kira songs from the Extra, I think), so it should be similar.
Once you extracted the data.win file and did the edit, the file you edited has to be lighter than the original (don't know why) or it won't accept it. Once that is done, change the original Data.win with your edited one.

I wouldn't be a part of it personally because I agree, not gonna surpass what already exists. But let people do what they wanna do is all.
And yeah adding your own sprites should be doable, or at the very least editing the existing ones.

Stella is going to be a pain in the ass to edit. If I remember correctly, each eye is a separated sprite.
A cross-eyed IDW from Girls Frontline? Thats the only thing that comes to mind to make it easier.
