Disco Elysium is a game built fully around dialogue and a "choose-your-own-adventure" style interactions. You can introduce yourself to a character as Raphaƫl Ambrosius Costeau and the game will actually refer to you as such if you choose to use this pseudonym

I mean, just choose-your-own-adventure games are built around that kinda interaction. Visual novels too. Most RPGs actually grant you the privilege of changing the events. Shit, even Fallout 4 gives you the ability to change the ending by accepting your son's proposition and joining the Institute, or any other faction for that matter.

KOTOR's choices radically altered how you turned up later in the game.
Same with Mass Effect, not counting the ending of 3.

SMT: Devil Survivor. The choices you make during the game along with how you spend your time, who you save, how you uncover the story gives you many different endings. It can be a bit difficult to unlock them all without a guide, but that gives the game plenty of replayability.

Witcher 2 has a mid game option which change who you are siding with. And it didn't just change the dialog, also places that you visited and the fights.
Usually games with alignment system (law/order and chaos/anarchy). So it is basically any Shin Megami Tensei, except that some of the games will only differenciate one or two boss battle and one or two scenes before the credit roll.

Literally Pokemon Mystery Dungeon and Dragon Quest III asks you questions at the start of the game (personality questions) to determine stats for your character. It's true they don't determine how the story will be (Im sure there are a lot of games that do not even including mods like Skyrim's) but it determines somehow your gameplay so it matters. Also Spore, not dialogues but actions determine your path (Shadow the hedgehog is simpler) and then there is Undertale.

Extra: Saints Row the third has a lot of choices and you gets rewards AND consequences together for Story and Gameplay. Anyhow your endind doesn't really matter on Saints Row IV cause both endings are kind of merged
