Castlevania Legacy of Darkness for the nintendo 64. Great game, with interesting characters, lovely, gloomy atmosphere is very memorable. I always come back to play it every now and then, and I always find something new or something I missed.
Another one I like very much as well is MediEvil 2 for the Playstation 1. Very funny and challenging.

Pushing the definition of retro with 2015 . But I've been thinking about giving Tokyo Mirage Sessions FE another shot. I remember but not vibing with the sort of "Clean,default anime, AA JRPG look"
Esp with plot about 17 year old entering the JP idol industry. It made me feel kinda cynical or jaded in a way where I may have just brushed off the plot before it had anything to say.

I guess for a more traditional answer tho, I am biggly hyper fixated on monster hunter even at it's most old and jank. I will defend it in saying that the scummy hitboxes, AI, and limited move set of Freedom Unite and below does encourage you to be more methodical in how you approach hunts. Giving context for mechanics in the the newer games that feel like bloat. Small enemies, certain items and moves being useless etc.
