My ex was someone who preferred to "rather not know" than deal with the truth which was truly bizarre to me. It made me curious if there are others like that and as to why they'd prefer to turn a blind eye instead.

I would prefer a painful truth. Only problem is that truths are unironically not objective a lot of the time. But the ones that are objective are good to know, and those that aren't at least let me know what the person who told it thinks, which is better than them lying about what they think.
