Probably head, because, like, I prefer being alive to the alternative. If you're talking about non-vital shit though, then definitely hands/arms. Can't really do much without it.

Arms, could probably live without legs, although definitely wouldn't prefer to. Although eyes are valuable as well, ears though? I guess not being able to feel the ambiance of sound would suck the flavour out of life pretty fast but I'd say it's not quite as bad as not being able to visualize the world at all.

Although, if we're talking aesthetically - hair. I just can't really imagine myself with no hair at all, not after all the years of trying to grow those damn things out to at least shoulder length.
