| Back to the topic, I made an omelette yesterday, if you put just a pinch of baking powder in it you can get those tiny bubbles inside it and it leads to a very fluffy texture, if that's your thing

i used to work as a chef and the true trick to a fluffy omelette is a splash of water or milk and whisking it properly.
