not sure if that's what you're looking for but i've wanted to try one of these oscilloscope DIY thinks for a long time. but it looks like it's mostly about soldering.

Grab an arduino/teensy/whatsoever of your choice, look for projects you want and can do/learn and you're basically good to go! The possibilities are more or less endless. May it be watering your plants, something light related, modding your coffee maker whatsoever!

Make an automated water supply for cacti. You can use cheap water sensors that don't get too much water on them. The ones with the bare metal on AliExpress.
