I installed arch linux on my old laptop yesterday, expecting a massive pain in the ass after much warning from my friends. Prior to this, I had only used Ubuntu and Windows. I ended up having no problems, I just copied commands from the wiki. Then I went to install everything. My friend helped me install a program called aurman, then I typed in a list of all the programs I wanted and pressed enter until it was finished.
Why do people say this isn't beginner friendly?

Because people are so damn dependent on GUI software that they are scared away by the CLI installer. It's no magic if you don't mind reading a manual and typing some commands. Gentoo is a little bit more hassle, but nothing you can't do if you want to install it.
Now, it begins to get hard when you decide to build your own distro, but that's something completely else (I'm of course referencing to LFS or similar)
