I mean... FLCL is kinda a mecha anime I guess. If you haven't watched FLCL, definitely take a look. It's a bit of a classic for sure.

Neon Genesis Evangelion is a mega classic too. It's referenced in many other works, and has helped shape the mecha (and anime as a whole) identity. The influence this one show has had on Japanese animation is difficult to express. It's definitely a must watch in my books.

The Getter Robo manga are legendary, and shaped so much like Eva and TTGL. The reading order is the original > G > Go > Shin > Arc
Outside of that, Braves stuff like GaoGaiGar, Jdecker is fantastic and comfy asf.
Votoms, L-Gaim and Layzner are really good. I've been watching Galient recently and it's a blast, knight robot fights horse knight robots.
Dragonar is my favourite, and it's (proper) subs are nearing completion.
Ideon just celebrated it's 40th anniversary too!
